Meet Arash
As far back as I can remember, I always struggled with my weight. Yo-yo dieting and a very dysfunctional relationship with food eventually had me tipping the scale at a whopping 320 lbs. The restriction of ‘forbidden’ foods left me wanting them even more and always feeling guilt-ridden. This led to a pattern of very bad eating habits and with that, a ballooning waistline.
Fast forward, I was 31 years old and deeply focused on a corporate career that had me putting in 70+ hour weeks, eating on the go, and consuming all the wrong foods. As hard as I tried to lose weight and eat right, a healthy lifestyle was not in the cards. I had married the love of my life, Madalina, had a great salary, and by all standards I was achieving the American dream, but why was I not feeling as good as I should have? Something needed to change.
Meet Madalina
Arash and I were your typical Type A personality couple--very driven in our careers and putting everything besides our health as a priority. Like most people, I too struggled with restrictive diets that resulted in some weight loss but inevitably gained it back. I didn’t like limiting my food choices and feeling guilty about foods I loved. Plus, depriving myself of certain foods didn’t make me feel better, just stressed.
How We Started...
In 2017, as a couple we decided to commit to a lifestyle change – to eat healthy and redefine our relationship with food. We wanted to take back control over our bodies and not see food as the enemy. We were convinced we could find ways to eat nutritious meals and still enjoy favorite foods.
The first hurdle was our love of pasta, a staple in many of our favorite dishes, but way too high in carbs (one cup is 37-43 grams) and low in protein. We initially found some options, but their questionable ingredients, strange smells, and still high carb counts were a big disappointment. They just didn’t hit the mark.
This dilemma resulted in taking matters into our own hands and embark on a pursuit to create the perfect pasta. We performed hundreds of experiments using different ingredients until we discovered the remarkable power of almond flour. We just kept trying, tweaking, and tasting. The result is Almond Love With… – a healthy pasta that is low in carbs, high in protein, and made with quality ingredients. We fell in love with this pasta and hope you will too!
Arash’s first IRONMAN 70.3 triathlon. He swam 1.2 miles, biked 56 miles, and finished it all off with a 13.1 mile half marathon in 7 hours, 23 minutes. Since starting his journey in Fall 2017, he’s completed 2 IRONMAN 70.3 triathlons, 1 full Marathon, and 4 half marathons. Madalina cheers him on for every race.
