Thank you for your purchase! Our tortillas are soft, pliable, and super versatile. Heat them up for a few seconds on each side to reach your desired level of crispiness.
In terms of flavor, our pasta has a nutty, whole wheat taste to it but takes on the flavor of whatever sauce you make it with. We highly recommend a creamy sauce, a mac and cheese, or any baked dish. Its even better as leftovers the next day.
In terms of texture, our pasta is naturally more al dente compared to regular pasta due to the lack of starch (and carbohydrates!) compared to traditional pasta. You may try the softer soak method if you like a softer pasta, but expect that it has more of a bite than traditional pasta.
Tortillas: We always start with California grown almonds as our first ingredient. We also use filtered water, avocado oil, non-GMO tapioca flour, arrowroot flour, pink Himalayan salt, and xanthan gum.

In short, instead of regular flour or semolina, we use almond flour. Almond flours are versatile, low in carbs, and have a great nutrition profile.
Tortillas: Our tortillas contain only 3 net carbs. Net carbs are calculated by taking the total carbohydrates in the product (in this case 5 grams) and deducting the total dietary fiber (in this case 2 grams).
Pasta: Our pasta contains only 3 net carbs. Net carbs are calculated by taking the total carbohydrates in the product (in this case 16 grams) and deducting the total dietary fiber (in this case 13 grams).
Our product have only 3 net carbs and can be a great option for those on the ketogenic diet.
We have two methods. The back of our packaging has the standard instructions for an al dente (firmer pasta). When following these directions, please make sure your water is boiling for the full 20 minutes.
Secondly, for a softer pasta, a lot of our customers like to soak their pasta for 5-6 minutes in room temperature water while their water is coming to a boil. After the 5-6 minute soak, boil the pasta for 10-15 minutes depending on your desired level of softness. You can then mix it with your favorite sauce and cook together for 2-3 minutes or bake it. The pasta will not become mushy.
We highly recommend the soak method to all customers for their first cooking method.
We have a lot of customers with type 1 or type 2 diabetes that enjoy our products regularly. As always, consult your doctor to determine if a particular food is right for you.
While all of our ingredients are certified kosher, our final products are not yet certified kosher. We are working to obtain our kosher certification.

Lets face it, Almonds are expensive! Our ingredients are naturally more expensive compared to their traditional versions. But at about $1-2 per serving, we think this is a more filling, nutritious, and healthy option.
Tortillas: To ensure freshness, we only ship orders on Monday through Wednesday. Orders placed on or after Wednesday will be shipped the following Monday. We ship via 2-Day Air.
Pasta: If we have pasta in stock, we generally fulfill all orders within 48 hours of your purchase. Once shipped, the average transit time is 2-3 days, though some orders may take up to 5 days depending on where you live.
We wish we didn’t have to, but unfortunately shipping is super expensive. We only charge a nominal shipping fee and contribute even more on top of what you pay for shipping. We try to keep shipping costs as low as possible while also providing super fast shipping.
